The turnary dairy works by supplying members with a quantity of processed product, calculated on the basis of the milk that has been delivered.
This turnary dairy, like those in Armo and Moerna, was built in the early 20th century by the dairy members who, based on the number of cattle, supplied materials and labour with the contribution of the Austrian region. The members brought milk there daily, which was poured into special buckets, weighed and registered.
It was distributed as follows on the ground floor: in the room to the east it was left to “surface” while in the other it was processed and made into cheese. Unlike the other dairies, there were no cooling tanks for the milk. At the end of the activities, the products were taken to the home of the “shift worker” for maturing.
In 1998, the building was bought by the municipality and restored, preserving all the traditional tools. Today it can be visited by contacting the Valvestino Ecomuseum, which manages it.
