from olive trees to EVO oil: an experience for the five senses

The hillsides of Soiano del Lago are a distinctive iridescent silvery green: the colour of olive trees. Some of the typical varieties here are Casaliva, Leccino, Moraiolo, Frantoio, and from the milling of their olives comes a fine oil: the most northerly EVO oil (extra virgin olive oil) production in the world. To sample it in the oil mills is to sense and taste all the care and wisdom that goes into the cultivation of the trees. Visit the castle and its grounds for a dip into medieval history; its cypress trees complete the experience with their spicy fragrance.
